I love fall produce! There is something so comforting about roasting root vegetables and baking apples as the weather begins to shift. Starting in November, I find myself adding Brussels sprouts to my grocery list at least every other week, sometimes weekly, depending on my meal plan! Brussels sprouts are high in Vitamins A and C which are known to help your immune system. With two young kids at home, I am always looking for foods that will help me build my immune system to fight off those fall and winter viruses!
To me, Brussels sprouts seem to be an underrated vegetable that often gets forgotten about. I don’t recall eating Brussels sprouts as a kid, but as an adult, this has become one of my favorite vegetables to add to my meals. My husband and kids are not the biggest fans, but I am hoping that if I make Brussels sprouts enough, I can convert them soon 😊
I’m not the most adventurous when it comes to preparing Brussels sprouts, so my go-to is to either steam or roast them. Check out Spend Smart. Eat Smart. for some tips on how to select, store, and prepare Brussels sprouts. Two of my favorite recipes to make with Brussels sprouts are Easy Roasted Vegetables and Roasted Vegetables and Kielbasa. I also have found that roasting Brussels sprouts with a little bit of oil and then drizzling them with balsamic vinegar and honey and topping them with dried cranberries when the pan is fresh from the oven is a quick and tasty holiday side dish. My dad often requests both roasted vegetables with Brussels sprouts and sweet potatoes or the cranberry Brussels sprouts dish when I start asking for holiday dinner requests. I’m glad that I can make a large batch for the holidays knowing that my dad is also a fan!
If you haven’t added Brussels sprouts to your grocery list in a while or have simply never tried them, give them a shot. You may find that you enjoy them as much as I do!
