Whole Wheat Pumpkin Pancakes

The fall produce is here! Even though it means letting go of tomatoes fresh from the farm or garden, I enjoy switching up my meals to feature what’s in season. Here in Iowa the fall produce is coming in and some people even have it in their gardens. We’ll see dark greens, winter squash, and root vegetables like parsnips and sweet potatoes showing up at farmers markets.

Though there are a lot of summer veggies that I like to eat raw, the fall ones inspire me to cook. Here are some of my favorite recipes that make use of what is in season this fall.

  • Easy Roasted Vegetables: This is a staple recipe for me and when root veggies are in season, it is the best!
  • Mashed Sweet Potatoes: My love for mashed potatoes is deep and real. This is about my favorite way to eat sweet potatoes.
  • Pumpkin Pancakes: I am not a fan of things that are the texture of pumpkin pie, but pumpkin pancakes are right up my alley!
