The Perfect Summer Treat

Frozen Pudding Sandwiches

With summer in full swing, my kids enjoy having a cold treat when we get home from a walk or the pool. If it were up to my oldest, who is 5, she would love to have popsicles or ice cream cones every day. As a compromise, we make Frozen Pudding Sandwiches to keep in the freezer when we want a frozen treat. The combination of peanut butter and pudding is tasty and filling.

Last month we highlighted a variety of ways to include kids in the kitchen. This is an easy recipe for my preschooler to help me make, and honestly, she could likely do this all on her own if she really put her mind to it! Frozen pudding sandwiches are great for kids that are practicing measuring, stirring, and spreading ingredients.

To make these sandwiches more fun, I set up stations with extra toppings to add to the peanut butter pudding filling. Some of our favorite add-ins are colorful sprinkles, mini chocolate chips, chopped nuts, and even sliced bananas or strawberries. You can even switch up the pudding flavor to really make this treat your own!
