Welcome to June! Summer is here and all of us at Spend Smart. Eat Smart. are looking forward to summer foods. This month we are going to focus on some tasty summer desserts. First up today is Peach Cobbler.
To make this recipe, start by draining the juice from two cans of sliced peaches, or slice up fresh peaches until you have between three and four cups of peaches. It is ok to leave the skin on the fresh peaches, it saves time and adds fiber. Spread the peaches on the bottom of a baking dish. Then mix up the topping, which is just pancake mix, milk, oil, and a little cinnamon and sugar. Spread the topping over the peaches and bake for about half an hour. This is a quick and easy dessert that you can make with ingredients you may already have on hand in your kitchen.
I have made this recipe for my family quite a few times, and here are some tips I have learned:
- I can double this recipe and bake it in a 9-inch by 13-inch baking dish. This is a good option if you would like to bring a sweet treat to a party or picnic.
- This recipe can be eaten for dessert or breakfast. My husband recommends eating it for both when you get the chance.
- You can skip the sugar. When I had my children do a taste test of peach cobbler with and without the sugar added, they preferred the version without sugar because the peaches were sweet enough.
