Thai Chicken Curry

Our June recipe of the month is Thai Chicken Curry. When I first started working on this recipe a couple of years ago, I had no idea the price of groceries would increase the way they have. Thankfully, this is a great recipe to have on hand when food prices are high because it is flexible.

Here are some ways to flex this recipe:

  • Use any vegetables you want. Fresh, frozen, or canned will all work in this recipe. You can even combine different types of vegetables or use up leftover vegetables from another meal.
  • Buy the rice in bulk. Often the price per pound of larger packages of rice is less than that of smaller packages. Extra dry rice stores well in the pantry or cupboard in a tightly sealed container. Extra cooked rice freezes well in airtight containers or freezer bags in one to two cup portions.
  • Try a different protein, or none at all. Protein is one of the more expensive food groups, so choose a protein that costs less for this recipe. I have enjoyed it with chicken and tofu, but I also think fish or pork would taste good too. Or, you can skip the protein and add extra vegetables.
