Pasta Fagioli Soup

Soup is one of my favorite foods and I especially love hot soup on a cold day. I often associate eating soup with family meals. For me, in the cold of winter, it is easier to slow down, make a big pot of soup and make more time for a family meal. This month, we are each going to share with you a favorite food memory. My favorite is not a single memory, but the combination of many memories throughout my life.

My family not only celebrates holidays together in the fall and winter, we also celebrate many birthdays. It is surprising how many of us were born in the cold weather months. Big pots of soup are often staples at these celebrations because they feed a large number of people and everyone in our family likes soup. I can remember many happy family celebrations sitting around a large table with bowls of soup – broccoli and cheese, potato, chicken noodle, and chili.

Our recipe of the month for December is a new soup I have put into the rotation for our family celebrations – Pasta Fagioli Soup. This soup has a tomato-flavored broth combined with pasta, sausage, beans, and vegetables. The flavor combination is delicious and the soup is filling.
