Roasted Butternut Squash and Brussels Sprouts

Serving Size: 1 cup

Ingredients

  • 1 butternut squash (about 3 pounds)
  • 1 pound Brussels sprouts
  • 3 tablespoons oil (canola, olive, vegetable)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Optional: 1/2 cup chopped nuts (almonds, pecans, walnuts), dried cranberries, or feta cheese

Instructions

  1. Preheat oven to 425° Fahrenheit. Spray a baking sheet with nonstick cooking spray or line with parchment paper.
  2. Wash squash and pat dry with a paper towel. Prick skin 6-8 times with a knife or fork. Place squash on a microwave safe plate, microwave for 5 minutes.
  3. When the skin of the squash is cool enough to touch, cut off the top and bottom of the squash. Cut off peel and cut in half lengthwise. Scoop out seeds. Cut squash into cubes.
  4. Wash Brussels sprouts and cut into quarters.
  5. In a large bowl, stir together cubed squash, quartered Brussels sprouts, oil, salt, and pepper.
  6. Spread vegetables evenly in a single layer on the pan.
  7. Bake for 15 minutes. Stir vegetables. Bake for 10-15 minutes more, until vegetables are tender.
  8. Before serving, stir in any optional ingredients.

Tips

Add one to two teaspoons of a dried herb or spice when adding the salt and pepper. Examples include basil, crushed red pepper, dill, curry powder, garlic powder, Italian seasoning, onion powder, or rosemary.
