Ingredients

  • 1 cup instant brown rice
  • 1 cup frozen corn, thawed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15.25 ounces) black beans, drained and rinsed
  • 2 cups cooked chicken, shredded or cubed
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 1/2 cup shredded cheese

Instructions

  1. Cook instant brown rice according to package directions.
  2. Heat a large skillet over medium heat. Add brown rice, corn, tomatoes, black beans, cooked chicken, cumin, and chili powder to the skillet. Cook and stir 10 minutes.
  3. Top with shredded cheese and serve.

Tips

Top with chopped vegetables such as avocado, onions, or peppers.

Use as a filling for burritos or stuffed peppers.

This recipe freezes well.
