Ingredients
- 1 cup instant brown rice
- 1 cup frozen corn, thawed
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15.25 ounces) black beans, drained and rinsed
- 2 cups cooked chicken, shredded or cubed
- 1 teaspoon cumin
- 1 tablespoon chili powder
- 1/2 cup shredded cheese
Instructions
- Cook instant brown rice according to package directions.
- Heat a large skillet over medium heat. Add brown rice, corn, tomatoes, black beans, cooked chicken, cumin, and chili powder to the skillet. Cook and stir 10 minutes.
- Top with shredded cheese and serve.
Tips
Top with chopped vegetables such as avocado, onions, or peppers.
Use as a filling for burritos or stuffed peppers.
This recipe freezes well.
