Choose sweet potatoes that are firm and smooth with few eyes (dents). Avoid sweet potatoes that are cracked, have soft spots or sprouts.
Store at room temperature for 5-7 days. If stored in a cool (50°-60°F), dark area, they will last about 1 month.
Rinse under cool running water and scrub with a produce brush.
Microwaved: Pierce potato with a fork 5-6 times. Place on a microwavable plate and microwave for 5-8 minutes, rotating and flipping halfway through.
Baked: Preheat oven to 400°F. Pierce sweet potato with a fork 5-6 times. Place on a baking sheet lined with foil. Bake until tender, 45 minutes-1 hour.
