Look for cauliflower that is firm, compact, a creamy-white color and with tightly packed florets. Avoid cauliflower that has brown spots.

Cut the crowns away from the large stems of the cauliflower. Break the crown up into bite-sized florets. Eat raw cauliflower with a low-fat dressing or dip. You can steam the cauliflower in a small amount of water on the stove, or roast in the oven with olive or vegetable oil and your favorite seasonings.
